Leon’s easy, “no-knead” pizza dough

My brother Leon was over a while ago and quickly whipped up a pizza dough that he touted as a “no-knead” pizza dough. Less work – sounds great! It was delicious so I asked him to share the recipe. I have made it a number of times since and it always turns out great. If you put the toppings on the uncooked dough, it comes out quite soft and chewy. If you bake the crust (one of the options below) it comes out a little firmer.

Ingredients (makes 2-3 pizzas)

  • 4 cups of flour
  • 1 and 3/4 cups of warm water
  • 1 tablespoon olive oil
  • 1 tablespoon of sugar
  • 1-2 teaspoon of salt
  • 1.5 teaspoon of yeast

Instructions

1. Mix everything except for flour.

2. Add flour and mix together with a spoon. Dough should be slightly sticky but not too much.

3. Cover with plastic wrap for at least two hours (I used a clean tea towel and it works fine too!)

4. After that you can put in fridge for up to a week

5. Separate amount required and lightly cover with flour. If not from fridge you can roll it out pretty quick. If coming from fridge then you need to let it warm up for an hour

7. preheat oven to 450 degrees

8. Roll dough out and transfer to pan.  You can put cornmeal or olive oil o the bottom of pan if you like.

9. Brush olive oil on top of dough.

10. You can pre-cook the dough for 5-7 minutes if you want and then add toppings and sauce or just add right away.

11. Cook until cheese is bubbling and crust is browned.

Pineapple Pizza

  • pineapple (1/3 fresh)
  • red pepper (1/2 pepper)
  • mozzarella
  • tomato sauce

Roasted tomato, olive, basil

  • chopped kalamata olives (about 12)
  • red pepper (1/2 pepper)
  • mozzarella
  • tomato sauce and roasted cherry tomatoes as base (roast until browning)
  • freshly chopped basil and arugula (goes on for last 2 minutes of baking)
